Boontjiesop Low Gi - Ingestuur deur Elaine
 
Die is 'n maklike vinnige resep vir Low GI Boontjie sop wat ek by die dieetkundige gekry het. Dit het niks vleis in behalwe die Bacon nie, maar ek is seker jy kan jou eie weergawe maak.

Ek gaan in engels tik.

Ingredients

1tsp Oil
1 med Onion peeled & finely chopped
60g Diced Bacon ( Eskort low fat or weigh less)
2x 410g Cans of Sugar beans ( or 500ml cooked dry beans)
500ml Water
5ml salt
Ground pepper to taste
60ml Oat Bran ( 4 tbl spoons)
250ml fat free or low fat milk
125ml ( 1/2 cup) chopped fresh basil, or 10ml dried sweet basil
15ml Lemon Juice

1. Heat oil in saucepan and fry onions until transparent
2. Add Bacon and fry untill crisp
3. Add Canned Beans with their liquid ( or cooked beans with a little extra water) Also add 500ml water
4.Boil Covered for 30 min
5. Mash beans ( use potato masher, or hand blender) add salt and pepper and boil another 15 min
6. Add Oat Bran, Milk and Basil and boil for another 15min
7. Lastly add the lemon juice.

Make this the day before and reheat for a quick Lunch. Eat with Low GI bread.

This is a very healthy winter warmer. enjoy
