PORTUGUESE CHORIZO AO BRAZILERO

Serves 4-6                               Preparation time: 45 minuts

 

INGREDIENTS

400g Rudi’s Smoked Chorizo

1 Large onion

2 Large green peppers (cut into rings)

5 Cloves of Garlic

3 Hot Chilies

1 Anchovy

1 Can back or sugar beans

2 Cups of rice (cooked)

1 Teaspoon Paprika

Salt and Pepper

1 Glass of Port or Sweet Red wine

2 Tablespoons Crushed Nuts

METHOD

  1. In a large pan sauté onions and large rings of green pepper.
  2. Cut Chorizo 1cm thick at an angle and add with chopped garlic, chili and anchovy. Deglaze with port. Add paprika, salt and pepper.
  3. Cook for 5 minutes on high heat and remove from stove
  4. Cook rice, strain beans until dry.
  5. Combine all remaining ingredients into a large bowl and mix gently. Garnish with nuts and serve immediately
