PORTUGUESE CHORIZO AO BRAZILERO
Serves 4-6 Preparation time: 45 minuts
INGREDIENTS
400g Rudi’s Smoked Chorizo
1 Large onion
2 Large green peppers (cut into rings)
5 Cloves of Garlic
3 Hot Chilies
1 Anchovy
1 Can back or sugar beans
2 Cups of rice (cooked)
1 Teaspoon Paprika
Salt and Pepper
1 Glass of Port or Sweet Red wine
2 Tablespoons Crushed Nuts
METHOD
- In a large pan sauté onions and large rings of green pepper.
- Cut Chorizo 1cm thick at an angle and add with chopped garlic, chili and anchovy. Deglaze with port. Add paprika, salt and pepper.
- Cook for 5 minutes on high heat and remove from stove
- Cook rice, strain beans until dry.
- Combine all remaining ingredients into a large bowl and mix gently. Garnish with nuts and serve immediately
