TUSCAN SAUSAGE, TOMATO AND BREAD SALAD
Serves 6 Preparation time: 20 minutes
INGREDIENTS
400g coarse bread, sliced
3 Rudi’s Italian Sausages cut into 1cm thick rounds (Italian Salciccia, Toscana or Hot Italian)
175g fresh ripe tomatoes, skinned, seeded and coarsely chopped
100g red onion (Spanish onion), chopped
75g fresh basil leaves, torn into shreds
8 tablespoons olive oil
Salt and freshly milled black pepper
METHOD
- Cut sausage into 1cm thick rounds and fry in a little olive oil until cooked but not overcooked and set aside
- Wrap the bread in a clean cloth and dunk in cold fresh water. Squeeze the eater out of the bread, keeping the bread in relatively whole slices. Arrange the slices in the bottom of a salad bowl
- Place the sausage rounds on top of the bread
- Mix the chopped tomatoes and onion together and spoon over the sausage in a thick layer.
- Scatter the basil on top and then drizzle with olive oil
- Season with salt and pepper and leave to stand for 10 minutes before serving
